USES OF PECTIN: The most common use of pectin is as a thickening or gelling agent in jams, marmalades and fruit preserves. Pectin is also used in confectionery jellies to create a better gel structure. In the 20th century, pectin was used as an ingredient in medicine to control diarrhea. Pectin increases stool volume, which helps calm acute symptoms. Pectin is also used as a demulcent in throat lozenges and is used in special medical adhesives.

TYPES OF PECTIN: There are basically two types of pectin, rapid-set and slow set high methoxyl pectin. The difference lies in the degree of esterification (DE). Rapid-set ones have more DE and are used for products where you want to encase fruit pieces in a gel, such as in marmalades. Slow-set DEs are slightly lower and are good for clear jellies. Pectin is used in the cosmetic industry as a stabilizer for creams and lotions.

This preserves the desired texture, limiting the creation of water/juice on the surface as well as the uniform distribution of fruit in the product.

Ingredients: Apple pectin (Е440i).
Usage: The product is widely used as a thickener, emulsifier and stabilizer in the food industry. Recommended dose: 0.1-2.0%, in accordance with the specified recipe and the requirements of the structure of the final product.
